The Art of Creating Egg Brulee: A Culinary Adventure with Alvin and Jimmy

One day, we found ourselves peeling eggs, and I was like, "I'm gonna try this. You probably shouldn't try this." Holy crap! Hey guys, it's me, Jimmy, and I'm here with Alvin Kylon at Ramen champ now. Alvin has made egg out of us all with his amazing food truck now in restaurant, and today we're going to make a brand new egg concept – egg brulee.

To start boiling eggs, the best trick is to have a super roaring boiling water. Why is that? Well, it releases the shell from the whites and cooks it really quickly. Alright, 5 minutes is good. Throw it in the ice bath, and uh, good go! The trick to peeling freshly cooked eggs is cracking the bottom right and then you just start peeling it from there. Just go right there, okay? And then we'll do the top part of the egg or the pointy part. Also, having this water from the water bath just takes the excess shell off, making it really easy.

So, we have these eggs now, and I use fishing string to cut them open. Oh, interesting! So, I just grab it and kind of shimmy it all the way through, and got that egg right there! Ooo, that looks good – just all the way through down the middle, like you're cutting cheese. Perfect! Alright, so what's next? At this point, we have to salt the yolks just to balance out the brulee part. And it also makes it taste more like an egg after all that sugar.

We get sugar and dust the top of them – gotcha! So, after you dust it with sugar, grab your blowtorch. Wait, wait, so I thought I could do this at home what if I don't have a blowtorch? I suggest you get one; invest in one, yeah definitely! I think that would be the piece to resist on my kitchen like you turn like you mean business – you want to keep it on the low heat. You're saying low heat, yeah, and then you're just waving it on top and can see it start to bubble up. That means caramelizing, which is the sugar right? Let's give it a try, try to go circular motion and get all of that egg – oh, that looks really good!

You don't want to burn it obviously; you just want to kind of brown it on top, but yeah, this is this is this is a bruleed egg put appe petit buddy right? See, so you have like yeah – it's nice and firm at the top. Let's crack it! Ooh, I love the color, man – it's like an egg fudge underneath! Holy crap, yeah; it's not bad, not bad that's amazing. Yeah, it feels like you're eating a candied egg right but the egg part doesn't like throw you off well anytime I got to use a blow torch in the kitchen it's a good day.
