It wasn't bad, but we wanted to elevate our snack game.

450.So, I'm going to keep the oil inthere while I prep everything.The key to also making thesewedges is boil them first.And then, pop them into the oven.So, they're going to be basicallyjust getting crispy on the outside.And then, stay really softand flowery in the middle,like you would with your favorite fries.Now, this recipe,it's a very simple chiliso that we have moretime to watch the game,hang out with our friends, have a beer.Okay, This is a little bit too small.I'll put them in a bigger pot.That's a bigger size.Okay, we're going tofill this up with water.Add some salt.And let it come to a boil.Once it comes to a boil,I'll cook them for aboutfive or six minutes.So, while my potatoes are boiling,I'm going to get the stuffready for my chili.I actually first made thisdish when I was in college.I was hosting the SuperBowl for the first time.I think it was probably the yearof the wardrobe malfunction.We all know what wardrobemalfunction I'm talking about.And if you don't know,you Google that.I made a chili cheese thatit was like canned chili.And I added in somecheese and cream cheese,mixed it together in the microwave.And that was it.I'm like, \"This is the best thing ever.You guys got to try this.\"And everyone loved it.This is based off of that.But obviously,it's a little bit more fancy.You can make whatever chiliyou want that you usually make.I'm sure it's delicious.What makes this chili even betterthan your home-cooked chili?Tabasco.It's going to add a nice subtle heat.The vinegar is going to balance with…it's going to cut through thefattiness of the meat and everything.And it's going to takeit from here to here.I'm just going to slice up the onion here.And you can save your onionsfor stock if you want to.You can cry about it if you want to.I'm going to cry, for sure.I always cry when I cut onions.I can't help it.I don't know why it makes me cry so much.But these tears, thesetears are tears of joyand tears of a little bit of sadnessfor thinking about the timeswhen I go to the Yankee Stadium.I go and watch.Every summer, I go and watchthem play, the Orioles.This is going to take me back there.It's going to be great.Okay.So, we're going to adda couple of tomatoes.And I want them to be overripe and soft.Because then, they're going tomelt into the chili really good.And the cool thing about tomatoes is thatthey have a nice acidity in them as well.Tabasco also has a really nice acidity.So, it’s going to pairreally nice together.We’ll wait for our potatoes to boil.We are going to start our chili.So, as I said, this is a very simple chili.This one is so easy,it couldn't be easier.I miss that it's easy.It's easy.We're going to… our onion in here.I can hear, our potatoes are boiling.I'm going to add our garlic on in,just a couple cloves, roughly chopped.So, this is the good basisof any chili, I think.You got to get your foundation going.You got to get your onions, your garlic.The garlic is nice and fragrant.We're going to add our tomato paste.Tomato paste is in there.It's caramelizing to add a nice anotherdepth of flavor to it as well.I'm going to add our beef on it.Now, it's going to brown our beef.All right.For me, that classicstadium chili is all beef.So, that's what I'm going for here.My potatoes are almost done.So, while our beef is going,I'm just going to strain out the potatoes.Okay, so, some of the potatoes have brokenup a little bit into smaller pieces.Those are the pieces that you're goingto be fighting your friends for, okay?Those are the piecesyou're going to be like,\"Oh, that's the bad piece.Don't eat that piece.\"Save those pieces for yourself.All right?Oil, don't forget.Be very careful with this, okay?We're going to carefully add potatoes.Sizzling, right away.Just go right into the oven.Our beef is nice and brown in here.We're going to add some beer.So, maybe a half a cup of beer.Whatever beer you want.Maybe something a bit lighter or a lager,or something like that, would be great.Okay, that's going to nicely deglaze.And we're going to add in black beans.Hey, some people don’t like any beans,and that’s fine.But I’ll add beans into mine.We're going to add in all ofthese nice tomatoes that we had.Now, the last final secret ingredient.We're going to add is our Tabasco.I think the best part aboutTabasco is literally this.Is that weird?The fact I find that very soothing?But I do.Two tablespoons of Tabasco go in here.Give it a mix.Let it come to a simmer.And we're going to keep cookingthis until the tomatoes break down.Just a little bit more for good measure.Tabasco is only madewith three ingredients.It's vinegar, chilis and salt.So, you don't need to addany other chili powder.Because you're going to get thesubtlety of the heat you need.And then, that nice vinegarinessthat’s going to cut throughthe fatty richness of it.Because there's going tobe ground beef in thisand a whole lot of cheese.Okay, our chili looks amazing.Potatoes, we've beenflipping every 10 minutes.It’s been about 40 minutes orso, let’s grab them out of the oven.They're crispy and golden,and just look perfect.So, I'm going to sliceup some scallions now,which is about plating the stuff, okay?Put the salt all over.If you can't hear how crunchythis is, oh my gosh.Look at this.It's perfect.It's so crispy.You definitely couldn't getit this good at the stadium.The crunchiest,crispiest most delicious wedgeswithout the need of a deep fryer,right here for you.We’re going to add our chili on top.It is definitely cheesy in there as well.You can see the cheese.All the extra cheese we have,we're going to put this on top.Nice big old dollop of sour cream.Because sour cream is delicious.It's going to finish it with the scallions.Look at that.That's so good.These potato wedges are literallythe crispiest potato wedgesyou could possibly get.The Tabasco adds a really nicesubtle heat to this with the beef,with the chili, with the sourcream, with the crunchy
