Hey Guys, as Much as I Love Making Elabor Dinners...
I want to share with you a recipe for veggie fried rice that I love because it uses stuff you already have in your fridge. There are also some shortcuts that make this dinner easy to throw together in under 12 minutes. I'm Meg and I'm passionate about finding ways to make life with kids easier in the kitchen.
All Right, So Let's Go Through Our Ingredients
You'll need some already cooked rice, baby carrots, red peppers, some red cabbage, frozen peas, and green onion. Then you'll also need some oil, crushed garlic, soy sauce, sesame seed oil, and eggs. Now that we've gone through these ingredients, let's head over to the stove.
The First of Which Is Rice
Now you do want some day old rice, but if you don't have that, feel free to make some fresh just kind of spread it out in a pan and let it dry out. This is an important step because you want your rice to be dry before cooking it again. I like to use day-old rice for this recipe because it's already been cooked, so I can skip the step of cooking the rice from scratch.
I Almost Always Have Some Baby Carrots So I Just Cut These into Some Pieces
These baby carrots are a staple in my fridge and I always have them on hand. They're easy to cut up and add some nice texture to the dish. Sometimes I use green pepper instead, but you can definitely use any color pepper you like.
You Definitely Want Some Sort of Onion
I'm using some green onion for this recipe, but you can also just use a regular onion if that's what you have on hand. Just chop it up and add it to the pan with your other veggies.
Frozen Peas Are Something I Also Always Have in My Freezer
These frozen peas are another staple in my fridge and they're so convenient to have on hand. They add a nice burst of color and flavor to the dish, and they're also easy to cook quickly.
Now That We've Gone Through These Ingredients Let's Head Over to the Stove
You'll start by turning the heat on under a wok or a large saucepan. Next, add a little bit of oil today I'm using avocado oil but you can also use canola oil. Then you're going to throw in your crushed garlic and these frozen cubes are such a time saver.

Using frozen veggies is one of my favorite shortcuts when it comes to cooking. They save so much time and effort, and they're just as nutritious as fresh veggies. I like to use them in place of chopping up fresh veggies, which can be a real pain.
I'm Going to Add My Carrots, Green Onions, And Peppers And You're Going to Want to Saute That for About Five Minutes Until Your Veggies Are Nice and Soft
Add your chopped carrots, green onions, and peppers to the pan with the oil and garlic. Cook them until they're nice and soft, which should take about five minutes.
Remove Your Veggies from the Pan and Add a Little Bit More Oil And Then Your Rice And Give That a Quick Toss
Once your veggies are cooked, remove them from the pan and set them aside. Then add a little bit more oil to the pan and toss in your cooked rice. This helps to distribute the flavors of the dish and prevents the rice from sticking to the bottom of the pan.
Now You Need to Make Room for Those Eggs Which You're Gonna Pour In There
Toss your rice around until it's evenly coated with the oil, then make a well in the center of the pan. Crack an egg into this well and scramble it up with the rice. This is one of my favorite parts of the recipe - I love the way the eggs mix with the rice and add extra protein to the dish.
I Like to Give Them a Quick Toss Through My Rice Before Adding My Soy Sauce And Sesame Seed Oil
Once your egg is cooked, toss it around with the rest of the rice. Then add some soy sauce and sesame seed oil to give the dish a savory flavor. You can adjust the amount of soy sauce and sesame seed oil to taste.
Throw In Those Peas And Your Cooked Veggies And You Can Toss Everything Together
Finally, add those frozen peas and your cooked veggies back into the pan with the rice and eggs. Toss everything together until it's evenly coated with the flavors of the dish.
