Today, I'm going to be making a delicious buttery confection that has often been celebrated during this time of year in celebration of Eid al-Fitr, which is the end of Ramadan. This sweet treat is a perfect accompaniment to tea, and I'll show you how to make it at home.

First, let's talk about ma'amoul, a traditional Middle Eastern shortbread-like cookie that is typically filled with dates or nuts. Today, we're going to fill them with pistachios, which will add a delicious nutty flavor and crunchy texture to our cookies. Ma'amoul can be made without a mold, but using one does make the process much easier and gives the cookies a beautiful shape. To start, we'll need semolina flour, sugar, butter, rose water, and pistachio paste for the filling.

Now that we have all our ingredients, let's get started with making the ma'amoul dough. In a large mixing bowl, combine 2 cups of semolina flour, 1 cup of sugar, and 1/2 teaspoon of salt. Add in 1/4 cup of unsalted butter, softened to room temperature, and mix until the mixture forms a crumbly dough. Next, add in 1 tablespoon of rose water and 1 teaspoon of rose water extract, mixing well until everything is fully incorporated.

Now that we have our dough ready, let's divide it into small balls, about the size of a golf ball. Once you have all your dough balls ready, fill each one with a small amount of pistachio paste, about half a teaspoon per cookie. Make sure to seal the edges tightly so that the filling doesn't come out during baking.

To shape our cookies, we'll need to flatten them slightly into disks and then place another disk on top of the filling, pressing the edges together to seal it securely. Place the ma'amoul on a parchment-lined baking sheet and repeat this process until all your dough balls are filled and sealed. Now that they're all ready to go, let's pop them in the oven at 350 degrees Fahrenheit for 15 to 20 minutes, or until they're lightly golden brown.

Once our cookies are done baking, let them cool completely before dusting with powdered sugar. When they're cooled, take a bite... Ahhh! The combination of semolina flour, rose water, and pistachios is absolutely delightful. The filling adds a nice crunch to the soft cookie on the outside, while the dates provide natural sweetness.

often hadthis time of year incelebration of Eid al Fitr,which is the end of Ramadan.It's a celebration.It's often called the sugar festivalbecause it represents the end of fasting.It is a time to visit, to celebrate,to share and exchange gifts.And this dessert, ma'amoul, is often had.I have lovely Saria tothank for this recipe.She wrote to me and suggested itand I looked up the recipe andit looks absolutely lovely.It is scented with rosewater,so it has this kind of perfume of flowers.And it's buttery and itjust sounds so delectable.So, we're going to be making it today.The recipe inspirationcomes from 196 Flavors.I will put a link down belowto the original recipe.So the first thing we needto do is make the doughfor the ma'amoul and it's kindof similar to a short crust.We have butter and we have flour,but we also have semolina flour,also known as durum flour.I ordered this online andI'll put a link down belowto where I found it.So in a large bowl, we're gonna combineone and a half cups, plus twotablespoons of semolina flourand then one cup plus twotablespoons of all purpose flour.And a quarter cup plus twotablespoons of powdered sugar.And three quarters of ateaspoon of baking powder.And to that, we're going to add one stickor half a cup of softened butter.Now we're gonna work this all together.You can use your handsand we want to get a nice sandy texture.Get that butter really incorporatedinto those dry ingredients.Next, we're going to adda quarter cup of milk.And I added this one tablespoon at a time.And then two tablespoons of rose water.So combine this all togetherand work it into a dough.If you find the dough to be a bit crumbly,you can add more milk,one teaspoon at a time.So once you form a ball ofdough, you're going to cover thisand let it rest for at least one hour.So while our dough is resting,we're going to prepare our fillings.So traditional fillingsinclude dried dates,dried fruits and nuts.In this bowl, I have a halfa cup of ground pistachiosand I just chopped thoseup in my food processor.I'm going to add one tablespoon of sugarand I'm gonna begin witha half tablespoon of waterand give that a mix untilwe form kind of a paste.So that's what we want.So for my date ma'amouls,I'm gonna be using this.It's made by the company Ziyad.And these are dried datesthat have already beenground up into a nice paste.So traditionally ma'amoulare made with wooden molds.I ordered this online and ithas a beautiful star patternbut there are lots ofdifferent kinds of patterns.And it kind of reminds me alittle bit of a moon cake moldin the sense that it's carved out of wood.So to ensure that our cookiecomes out, I'm gonna line itwith some plastic wrap.And then take a bit of our dough.It smells so good.The rose water is so lovelyand press it into our mold.And we're gonna create alittle cavity for our filling.So take a bit of the date paste,roll it into a ball and pressit in the inside of there.Now we're going to takeanother piece of doughand press it right overthe top of the filling.Then, we can just pull on the plastic wrapto take out our cookie.Absolutely perfect.So then we take that and then place iton a parchment lined baking sheet.This time we're gonnause our pistachio fillingand it's probably about a half a teaspoon.But that will depend of course,on the size of your mold.After we shape all of our ma'amoul,we're going to place them intoa preheated 350 degree ovenand bake them for 15 to 20 minutes.We don't want these to brown at all.They should stay nice and pale in colorand then we'll let themcool off and we'll dust themwith powdered sugar andthen give them a taste.Alrighty, my lovelies.Look at these beautiful sweets!They're so stinking cute.Look, look, look, aren't they beautiful?Now that they've cooledoff, we can now dust themwith a liberal amount of powdered sugar.Powdered sugar just makeseverything look so cheery.Ooh, I love it!(light orchestral music)Let's finally give these a taste.Itadakimasu!Mm.Mhmm.Lovely.Filled with the scent of roseand the semolina flour in theregives them a nice little toothsome bite.And they're just lightly sweetenedand full of buttery goodness.Lovely!I just need a cup of tea to go with this.I really appreciate thelevel of sweetness in that.There's just enough sweetnessto say that this is a dessert,but not so sweet that it overpowersthe natural sweetness of the dates.The dates inside are naturallysweet and have a lovelykind of creamy consistencyinside, which is a nice foilto the short butterycookie on the outside.Alrighty, let's try the pistachio version.Mm.Mhmm.That's lovely as well.And once again, becausethis isn't so sweet,you really can taste theflavor of the pistachio,that rich nuttiness that tastesa little bit like pine nuts.There's a little bit ofthat kind of resinous flavorthat's inherent to pistachios.Lovely.I like them both.If I had to choose, gosh.I think I would likea combination of both.I especially like thetexture of the nut filling.It's kind of crunchy, but Ilove the intense sweetnessof the dates.So there you have it, my lovelies.That's how you can make homemade ma'amoul.You certainly don't needthe mold to make them,although it does makea very pretty result.You can just roll these intoballs and fill them as welland just bake them as I did.And you'll have a lovely, lovely
