Baking with Laura: A Sweet Treat and a Glimpse into Her World

Laura sat down with us to bake a delicious batch of hot pink grapefruit shortbread cookies. She was accompanied by her friends, who were each representing a different character from her book series. There was Artemisia, the sensitive artist type; Hang On, the jock; Blaze, the sensitive artist type; and Heron, the quiet bookish nerdy kid. Laura explained that each of them had a unique personality, which she would draw inspiration from when writing their stories.

Laura began by explaining that she and her friends were putting together hot pink icing for the cookies. She showed us how to mix the powdered sugar and grapefruit juice to create a perfect consistency. The mixture was thick enough not to worry about it, making it ideal for decorating cookies. Laura then added a pinch of salt to balance out the sweetness, which would cut through the sugar and add depth to the flavor.

As they worked on the icing, Laura shared her thoughts on what it would be like if one of her friends were to steal the most of these cookies to satisfy their sweet tooth. She thought that Heron, being a bookish nerdy kid, would definitely have a sweet tooth. Laura then discussed what she would be doing with her life if she weren't an author. She joked that she would probably open a bakery, which seemed like a glamorous and exciting career path.

Finally, Laura gave us some insight into what's next for her. Two books are set to be released in 2021, one of which is an adult book retelling the story of King Arthur from the point of view of the character Belief You Shall. The book has been years in the making and was finally edited and finished. Laura shared that she's excited to talk about it more and mentioned that it will be released next spring. Her second book, which will come out next fall, is a mystery novel that has been pitched as "a princess bride spy book". Laura couldn't reveal too much about the plot just yet, but hinted that fans of her previous works would enjoy it.

excited to take you guys along with me so I am here with Laura Sebastian and what are we gonna be making today we're gonna be making some salted grapefruit shortbread salted it grapefruit shortbread so I made these to my launch party forever clean because they're and also with the icing matches the cover pretty well I'm so excited I love the hot pink it's like my favorite thing I know that the cover is so bored I feel like it cuz I feel like a lot of times we tend to try to like steer away from girly stuff I'm like this first be like oh we have to appeal to like everyone I love what they were like no we're gonna make it hot pink and you can deal with it it's awesome yeah so what are sort of the ingredients are gonna be working with and like what I have no clue I'm not a proper Baker in any sense of the word so like I'm learning from you today so these are really really easy and they don't use a lot of ingredients so all we really have is we have better that's been softened we have some flour we have grapefruit zest and grapefruit juice and then we have two bowls of powdered sugar 1 for the shortbread and then one for the icing and a little bit of vanilla extract um and some flaky sea salt to top it sounds amazing so is it sort of like we just combine it all together um so we're gonna start by putting some stuff in the food processor um you can do it by hand but I think the food processor really like saves you a lot of trouble and all gets the right consistency pretty easily otherwise you need to use like a pastry cutter and you're like it takes a lot of work a lot of arm strength like I tried to do it by hand before I would not recommend that save yourself some trouble yeah so yeah so we're gonna put everything in the food processor roll it out pop it in the oven the oven is preheating to 350 and and then when it comes out we ice it cool yeah and if you guys are interested in making the assaulted grapefruit cookies yourself I will link the recipe in the description what is first we're gonna put the butter this is half a cup of butter I didn't know whole stick of butter 1/2 a cup of already it is so much grapefruits a string out in there the recipe says 1 tablespoon like like nervous suggestion okay I like a good like pop of flavor so I usually do a bit more and then the 1/3 cup of powdered sugar and then the flour the flour and the extract I think yes and then the extract oh and then a pinch of kosher salt so all you really have to do is just dump it into your your pan and then I already sprayed it with Pam so it won't stick yeah so easy yeah oh it's it's ridiculously too easy I want to make this all the time now you know trick yeah I'll give it a go all the way out yeah I love the feeling of playing with doing what I'm going to like Italian restaurants where they would give you just like that was my flour and water it like makes me run Keitha yeah I felt like they never used my dough I did not who's like something is off music oh so now we're gonna take a fork and just start poking a little what what did the holes does it do it actually don't know I think it has to do with like releasing moisture Beauty I think um but now goes in the other pool that's it so how long are we going to be cooking the cookies for about 20 minutes 20 minutes so while those are in the oven we're gonna sit down and we're gonna talk a little bit about ash princess and everything I'm so excited so worried why don't you tell us about ash princess the trilogy's whole sure um so it's the story of a captured Queen who's held hostage from the time when she's six to the time when she's 16 um and she kind of tells herself for 10 years that eventually someone will come and save her and in the opening chapters she realizes that no one is coming as her last hope of rescue dies and that's to kill him so like if that's in the second chapter it's Rob spoiler um yeah so then she realizes that if she has any hope of of getting out and saving her country no one's gonna do it for her she's doing herself and so she starts to uh use hurt her mind and her the Intel she's gathered over the last 10 years of living among these people to figure out her own way out awesome so now that the trilogy has been completed I would love to know if you had to give like a word or phrase to represent your experience writing each book oh my god so like one word or phrase for each book what would that be I feel like ash pencils would have to be lucky lucky because it was my it was my tenth book 11 that I'd written and queried and and tried to get published and none of the other ones worked so I feel like ash princess was my lucky book like it was the one that I finally I think it was it was the first one that was good enough it was also the person that really hit the market right so no it's just like it was lucky there's so that's like that's good work I think for that on ladies milk I think was aa challenging like ask as everyone says second books are at nightmare as second books in now though yeah I actually think it was I thought it was harder and then I turned it into my editor erm and it was like this is good but then I got got like mold into a false sense of security of my third one mmm when I was like oh this is going on Jake I know that my effort was like we need to talk I think so because I think it anyway it's it's freeing because it's it's not just for me but I think for the characters as well um like I just really love the ending and I think like it's like a very like freeing ending for everyone involved really so so what was the word okay I guess liberate liberate he's never been freeing I love them every day so lucky challenging and liberation yeah what a story it is so so as today we are baking some cookies I was curious if there are any like foods or desserts that are native to Austria that come up in the book yeah so there's um it's not a dessert but they have a a coffee drink but maybe they like to drink that it's coffee with a little bit of honey and cinnamon and milk yeah so my first for my first launch party actually made cookies that were to that there was some honey cinnamon and coffee and the cookies and they were shaped like little crowns with black icing or very proud we guess so that's that that's what I always think of when I think of like Austrian how like it tastes I guess have you ever actually made the coffee or somehow you like to drink is that your first but you've heard coffee I liked when I was writing those so while you are writing and reading do you have any drinks or treats but you like to indulge in oh yes so my the coffee shop that I do a lot of writing at and um they have a chocolate hazelnut muffin Oh and that's that's my oh my gosh that's amazing yeah it's not to where I can't write without it Mad Men cult bro I'd like I'm like 90% cold through at this point yeah so what is your favorite and least favorite part of the writing process as you've been doing it for so long how long how many gears have you been writing first of all 14 I think I started when I was 16 um yeah it's almost half my life actually not I'm thinking about it but it's so I think the reason I had to write so many books before before Ash Memphis is that I didn't know how to edit I had no idea how to editing was just for freeing I was like for typos but how is this like I didn't don't matter like actually changed the story I kind of thought that you just wrote and that was the end of it um so I think but now that I know how to do it I do like editing I think it's a bit of a grass is always greener situation for me where when I'm writing I'd rather be editing and when I'm in anything I'd rather be writing sounds like a very classic authors statement to make so what is your like favorite part of writing and being a writer I mean I love meeting readers I really do like I love like it's all it's still just so weird to me that like people have read my book and if someone like comes up to me and like tells me that they read the book or tells me even that they like enjoyed it I mean like mentioned specific thing somewhere it's just like me this is thing that like existed my head for so long is like not my head anymore it's just like a surreal a very surreal experience that I have not quite gotten used to yet this is my favorite question to always ask authors like what is one or if you of like most impactful or memorable silly any sort of moments that you've had with in interactions oh oh I had a reader bring me a book editor of that and the book was burnt Wow really burn marks on the corners and she was like I'm so sorry like it was my bad I was trying to take a picture of it with in a fireplace and I feel like it's like a great book so in ash princess survival and resilience seem to be like really strong themes throughout the books so I'm curious what made you want to focus on that your story so I've always loved fantasy books um and but I've always had a hard time seeing myself in them because a lot of times like the heroine third argue but like you know the it's even sci-fi fantasy it's always like you know tough girls with swords and bows and arrows and like real spying their way out of situations and like as much as I loved reading about them as much as I like admire them for their badassery I always knew that if I were in those stories I'm diabetes yes laughs you know I would not survive prologue um so I wanted to write a book where a girl like me could survive without like that kind of physical strength Sophia's raised in the in a situation where she's never been trained she's never had some of the sword in her hand she's never learned how to survive in that way but she's learned to survive in a different way and she's learned to like read people she's learned to to figure out how to how people see her and how to manipulate that mm-hmm and I think that's the that's how she survives and so I wanted to write about that girl so if some of the characters from the series existed in the real world I'm so curious - what you think they would be like like what would their style their said it could be what kind of music would they listen to what copies what they have I just like especially as a fantasy fan myself I love envisioning fantasy characters in our world have you ever given any thought as to what they would be doing I think Theo would definitely be the like the quiet girl and well I don't think she would draw a lot of like attention to herself I think she'd kind of you know be the girl eating lunch in the library mm-hmm I don't think she at the beginning of the book she doesn't really have friends she was like one friends and things got a little complicated there um I think that would be that would be her and I think that's why you know I relate to be as if I was me too um and I think our Soren would be the job mmm horn and Erik would both be the jocks Porsche or blaze would be like a sensitive artist type like hang on the art really always has like paint on his clothes back in the thing Artemisia would be the should be that like girl you're like a little bit afraid of but like also like envious uh um probably a little bit goth yeah and then Heron would be like you feel like the bookish nerdy mm-hmm like sweet kid that like is also very quiet yeah I could see them also getting like together breakfast yeah contraction I love ya now we are going to put together our hot pink icing yeah so what do we do for this part so I have a cup of powdered sugar and then I have some fresh squeezed grapefruit juice so first we're gonna add by the tablespoon start with two and then we're gonna stir that and kind of see where we're at and maybe add a little more well we want it to be like a nice like gluey consistency we'll do a little more just a smidge don't add the flavor yeah I mean the more the more juice to use the better it takes oh so now admittedly the first time I've used this particular kind of so what we're gonna do is we're just gonna pour this loopy mess the whole thing in the middle oh yeah oh yeah I'm an icing fiend so this sounds good to me yeah I think I think about this is that it is so thick that you don't have to worry about it like it can be like a really thick and I'm just not like we're making pizza this is like a hot pink pizza I love it yes perfect so now I'm gonna take the socks and just you'll think it's too much it's not you want a good like a good dose of salt to you I to cut through all this with sugar it's so good that's it and now we're gonna wait for the icing to heart in a bit and then we'll cut it into little slices but yeah easy to eat right exactly right so we finished our grapefruit shortbread the point of view of believe you shall i oh yeah it's so cool it's something I've been working on it since out of 17 so it's been a long time in the making and I've written and rewritten it and rewritten it over and over and over again which I guess was like the only time I open it I actually ended and edited doesn't why it's over I expect that work isn't the only good real time I edited definitely Heron Heron Heron yeah I feel like he's definitely got a sweet you play really well so if you currently were not an author what do you think that you would be doing with your life right now I mean I'm not just saying listen we just made cookies find the guy I'm like open a bakery mmm I feel like I would like enjoy having a bakery though I feel like that would look like something you're like seems a lot cooler rom-coms than it probably actually is like you know I could be no glamorous as it is in my mind but like yeah so now that the ash Princess trilogy has concluded can you give us like any insight on what you're working now or what we can expect from you in the future so I have two books out next year in 2021 um the first I can talk about it's a it's an adult book that comes out I think I think next spring and it is a king Arthur retelling from the point of view of believe you shall i oh yeah it's so cool it's something I've been working on it since out of 17 so it's been a long time in the making and I've written and rewritten it and rewritten it over and over and over again which I guess was like the only time I open it I actually ended and edited doesn't why it's over I expect that work isn't the only good real time I edited anything and yeah but I didn't really know how to do it so I just like start from scratch every time but yeah I know it's and it's coming out from a sparkly from penguin Random House like a whole tree huh but yeah it's fine from them I'm really excited to get to talk about it more it's called half stick of shadows mm-hmm and then my next way a will come out next fall and I can't say too much about the shot yet there's never had but I didn't pitch it as a my team princess bride spy book mmm Jenny kind of tells you everything you
