As we sit down to discuss the art of barbecue, it's clear that the topic is near and dear to many hearts. The kind of conversation we're about to embark on is one that will make you want to kick back, grab a cold one, and get ready for some delicious food.
Food Police and Supermarket Turkey
If you're one of those people who thinks that your turkey should only come from a supermarket or a fast-food TV dinner, then it's time to move on. For the rest of us, however, we're going to take it back to the basics. We'll be using wild turkey, and it's real easy to do well, but you're going to have to do some hunting first. Don't worry, we won't judge you for not being able to hunt; instead, we'll guide you through the process of preparing a delicious barbecue.
Feathering Out a Turkey
This is how you feather out a turkey. We're going to get it ready for the grill and make sure it's good to go. Now, if you've never had wild turkey on the grill before, then you definitely need to check this out. It's some real good eating, and it's real simple to prepare. All you need to do is use your favorite barbecue sauce and throw that meat on the grill.
Indirect Grilling at 300° F
We're going to do this on the grill indirect about 300°F. Now, we know what you're thinking: "Why not just put it right on the grill?" Well, my friends, the leg bones are going to take a little bit longer of course, and while we're waiting, we can dress up these turkey breasts. We'll use a little bit of olive oil or good cooking oil and coat both sides. You know how to do this right; it's simple enough.
Seasoning the Turkey
Now, it's time to add some flavor to our turkey. We're using some off-the-shelf spices that include a little Chipotle. Some of you are asking what wild turkey tastes like. Well, let me tell you, it tastes like turkey, and this is real fresh. We want to kind of cook it slow, so it's not going to take long to do; maybe about 35-40 minutes at the most.
Halfway Through and a Flip
We're about halfway through this, and it's time for a flip. You getting hungry? Throw some more hot sauce on it! We'll check back in another few minutes. One more step before we pull these off the grill: kick up these turkey breasts just a little bit. Before pulling them off the grill, we're going to add some pads of butter. Everything goes better with butter, right, especially on barbecue.
The Final Touches
We've got some brown sugar and Thin slices of Macintosh apples. Use your favorite apple; we know where we're going with this.
