Welcome to How To Cook That! I'm Ann Reardon, and today we're making cute emoji cheesecakes. There have been so many requests for emojis, and also lots and lots of requests for another giveaway. So, today we're giving away 12 Breville scraper/mixer pros. We're going to give them to the first four people who find this little blackboard that appears four times in the video, each time with a different word.

Now, let's get started with making our emoji cheesecakes! First things first, we need some ingredients. For this recipe, you'll need a 20cm square baking tin lined with non-stick paper, a microwave-safe bowl, a measuring jug, and a whisk. You'll also need some cream cheese, butter, sugar, eggs, vanilla extract, flour, and your choice of chocolate for the eyes and mouth.

Next, we're going to make our crust. In a medium-sized bowl, mix together 250g of plain flour and 100g of confectioner's sugar. Add in 50g of unsalted butter that has been softened to room temperature, and mix until it forms a crumbly mixture. Press this mixture into the bottom of your lined baking tin.

Now, let's move on to making our cheesecake filling. In a large mixing bowl, beat together 300g of cream cheese until it's smooth. Add in 100g of unsalted butter that has been softened to room temperature, and mix until it's fully incorporated. Beat in 150g of granulated sugar, followed by 2 large eggs one at a time, making sure each egg is fully incorporated before adding the next. Finally, add in 1 teaspoon of vanilla extract.

Now that we have our filling ready, let's fill our cheesecakes! Pour the filling mixture into your prepared baking tin and smooth out the top with a spatula. You can use this to create your own unique emoji designs on top - just get creative!

Next, we're going to bake our cheesecakes. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit), and place the cheesecake in the oven for about 15 minutes, or until it's set around the edges but still slightly jiggly in the center.

Once your cheesecakes are baked, let them cool completely in the tin before removing them. To assemble our emoji cheesecakes, you'll need some melted chocolate and a piping bag. Fill the piping bag with melted chocolate and pipe out your designs - don't worry if they're not perfect; we want them to be cute and imperfect!

Finally, it's time for the finishing touches! Melt some chocolate and use it to create the eyes and mouth of your emoji cheesecake. You can also add in some colored candy melts or white chocolate to make your emojis pop.

Now that our cheesecakes are complete, let's put them together. Once you've outlined your emoji designs with chocolate, give them a little shake to smooth out any lines. For the colored parts of your emojis, you can use either colored candy melts or white chocolate and then mix in some oil-based food coloring to make them the right colors.

So justtake some sweet biscuits which ever ones youlike and place them into a bag and then justbash them with a rolling pin.All the recipe quantities are on the websitehowtocookthat.net and I’ll link to thatin the description below.Then tip all of your crumbs into the meltedbutter and mix it well. It just stirs quiteeasily it just makes the crumbs nice and moistso that they will stick together when theyare in the base of our cheesecakes.Now that is mixed in we want to cover ourcontainers. Now I am using containers witha loose base as you can see.So because when you bake cheesecakes theyneed to be baked in a water bath. So theydon't get too hot and make the cheesecakecrack. We want to cover this with foil sothat none of the water gets in there.So just take a piece of foil place it overthe top and squash it right down so it coversthe sides and make sure that it is comingup to the top on each side so that we don'tget any water going in to our cheesecakes.And then put the base back in the bottom.So once we've covered each of those we wantto put the crumbs in the base of each one.And if you use a scoop then you can get thatamount even in each one so that your baseshave the same sort of straight line.Once you've done that take something flat.I am just using a bottle and just squash downthose crumbs so that it looks nice and flat.Now to make our cheesecake filling. What weneed is some cream cheese. We've got blockcream cheese. Some sugar we've got 2 eggsplus one egg yolk, cream and I get lots ofquestions about cream. You want any creamthat is about 35% fat so in the US I thinkthat is called heavy cream. Here in Australiapure cream, thickened cream any of those arefine. And some flour, plain or all=purposeflour, some yellow food colouring and alsosome vanilla and a teaspoon measure for that.So first of all we ant to tip our cream cheeseand our sugar into the bowl of our electricmixer. Ad the sugar in and then we want tomix that on medium speed until it is niceand soft. And the scraper mixer on this doesa pretty fast job of doing that.OK once that is mixed an looking creamy andyummy we are just going to swap over to ourwhisk attachment so just scrape all that off.If you've got some little ones in the housethey might like to lick that clean for you.Push and twist that one on. Now we want toadd in all the rest of our ingredients. Soadd in your eggs with the extra egg yolk,the cream, the flour and our vanilla. Nowwe just want a couple of teaspoons. Just givesit that nice vanilla flavour to it. I am notusing vanilla that has the seeds in it becausewe don't want those little black dots in ouremoji faces we want it to be just plain. Thenjust turn that on to whisk againThat looks great nice and fluffy now justadd in your yellow gel food colouring andyou don't have to add gel food colouring ifyou just want them to be cream or if you don'twant to add colour you don't have to.Lovely we've got that beautiful emoji yellowcheesecake mixture.Now you could just spoon that into your containersbut if we do that it is going to be hard toget the tops exactly flat, whihc we want itflat for the nice faces so what I'm goingto do is put it into a piping bag and thenfrom there we can pipe it into each of them.Which will just make it easy to get it niceand neat and not on the edges of the bowl.So once that is full just put it over thebowl so you don't get it all over the bench.Give it a shake to get rid of any air bubbles.And then just twist the top to stop the mixturecoming back out of the top.Now what we want to do it just take each one.Put it down low and just squeeze and go aroundin a circle until it is about that full about3/4's full. Once you've filled them all whatyou want to do next is give it a shake anda bang on the bench. Ands again the reasonwe want to do that is because we want it niceand smooth on top.Place them all into a large baking dish.Then carefully pour in some hot water onlyto about half way up the sides. Being carefulnot to get any on the cheesecakes.Having it in a water bath just keeps it ata consistent temperature and makes it notgo hotter than the temperature of the water.So the water obviously can't go over 100 degrees.So we will put that in our oven and we'llleave them in there for about 15 minutes.We need to keep an eye on them because youdon’t want them to browned on top we wantthem nice bright yellow.So melt some chocolate and put it into a pipingbag. I am using compound chocolate today soyou don't have to worry about tempering it.And then just print out your template andI'll put this on the website in the size thatI am using for this dessert. If you are makingyour cheesecakes in a different size thenyou may need to enlarge it or make it smaller.then just put some non-stick baking paperover the top.And then just outline the little patternsfor the eyes and the mouth. The advantageof doing it onto some paper instead of directlyonto the dessert is if you make a mistakeyou can just make it again. So it doesn'tmatter you haven't stuffed up your dessert.You could also just make heaps of these andserve these to the table and let your guestsmake their own emoji cheesecakes.So what you do once you've outlined it isyou just give it a little shake like thatand it gets rid of all those little linesand makes it smooth. Fo your coloured partof your emoji's you can wither use colouredcandy melts or you can use white chocolateand then just mix in some oil based food colouringinto it to make it the colours you want. Withyour heart emoji's outline them in your normalchocolate first and then fill them up withthe red so you get that nice border on theoutline. And then just like you did beforegive them a little shake just to smooth outthe top. Perfect.Once they are cooked take them out of theoven and let them cool.So then just take the foil off. Place it ontop of something small and gently just pushdown on the sides and there you have yourcheesecake. And then just transfer that ontoyour serving platter.So now our cheesecakes are baked and cooledall we need to do it lift up these littlepieces of chocolate and place them carefullyon top so we've got our little sad face. goingon top of this one.
