The Base: A Simple yet Essential Component

To make the base of the lemon bars, we need to combine one-and-a-half cups of all-purpose flour with a third of a cup of white granulated sugar and 2/3 of a cup of melted butter. So, I'm just going to begin here mixing with my spatula then change to my hands just to make sure the mixture is really well mixed after you've done that grab up your baking dish I'm just using an 8x8 pyrex dish but you can use just about anything you want so we're just going to give this a nice liberal cold in a baking spray put your dough in and we're just going to kind of work this up with our hands and it might become a little bit dry and crumbly but that's perfectly fine until you end up with a nice even basement something like this. Now, we're going to slip this into a 350 degree preheated oven for about 20 to 25 minutes just so it's firm and a little bit browned.

Creating the Topping: The Final Touches

To make the topping, we need to combine a cup of white sugar with two and a half tablespoons of all-purpose flour. This is where people often get confused because they think that using too much flour will ruin the texture of the bars. But, believe me, this amount of flour is just right and it's what gives the lemon bars their signature taste. So, I'm just going to grab my whisk here and mix this up until it's nice and smooth.

Adding Eggs and Lemon Juice: The Secret to a Great Lemon Bar

Now that we have our dry ingredients mixed together, it's time to add eggs and lemon juice. Yes, you read that right - lemon juice! Using freshly squeezed lemon juice is what gives the bars their tangy flavor. And, of course, we need three eggs to bind everything together. I always get asked if I can substitute something for eggs, but the answer is no - eggs are essential to holding this recipe together.

Baking the Lemon Bars: The Final Step

Now that our base and topping are ready, it's time to bake the lemon bars. We'll pour the topping over the base and return the dish to the oven for another 25 minutes. This will ensure that the filling is set and the crust is golden brown.
