**Coconut Crusted Chicken with Papaya Salad**
We're going to roll them through flour egg and bread crumbs because you want this to stick to the chicken triple Duncan that's why. We need to get it to stick to the chicken so we don't just put it in the oven and hope for the best.
To achieve this, we'll start by mixing together half desiccated coconut and half fresh or dried breadcrumbs with a little bit of cayenne pepper. This will give our chicken a nice crunchy coating. If you want to add some extra spice, now's the time to do it. Next, we'll mix up our "egg" which is just flour mixed with a little water until it forms a smooth paste.
