Chef Michael Symon #123BBQ BofA Summer Series - Grilled Eggplant and Mozzarella

Partnering with Bank of America to Celebrate the All American Cookout

Hey guys, I'm Chef Michael Simon and this summer, I am partnering with Bank of America to celebrate the All American cookout. We've been asking everyone to use the hash1 123 BBQ to share pictures on social media of everything they have been barbecuing and grilling this summer. And let me tell you, we've seen some amazing things like bone WPS grilled corn with chili to complement his dried Dy tops with blue cheese shallots and habanero sauce. Another great example is the way another pint please demonstrated his skills using an iron skillet in the middle of the grill for asorted bell peppers and onions paired with some wonderful sausages.

I've been really inspired by all of you, this is what really gets me excited about summer and barbecuing. So, I'm going to start off with a little vegetable dish that's out of character for me but I love it - grilled eggplant topped with beautiful summer tomatoes, fresh mozzarella, basil bread crumbs. The first thing I'm going to do is slice this nice firm eggplant into pretty thick rings generously sprinkled with extra virgin olive oil and then kosher salt and some cracked black pepper. My grill is set to medium high heat here, so this isn't a low and slow barbecue dish, it's more of a grill dish.

Now that the Grill's been heated, I keep the lid down when the Grill's heating to really maximize the heat. Place the eggplant right on there, now we move over to our tomato and about the same thickness as the eggplant but a little bit thinner because the eggplant is going to shrink a little bit as you cook it and you just want that nice balance here. Also, what I did to garnish this dish is take some pinkle breadcrumbs toasted in a little bit of butter and then tossed with some fresh chives, it gives you some great texture.

Open up our Grill, can see we're getting those great grill marks on there and that eggplant is on its way to cooking through. Let those continue to grill season up our Tomatoes again when you're cooking you guys, season by layer build a layer build a layer or else the food tastes flat. Now, take our Tomatoes and layer them right on top. Take some fresh mozzarella just cut it into thin slices just like this mozzarella goes on top and you're just building these delicious little stacks.

We put this down and it's going to start to melt so we just want that mozzarella to kind of ooze right over the eggplant tomato, it's going to be absolutely delicious. Take some of my fresh basil now we just a nice rough chop of our basil just like that and what we're going to do is finish this with extra virgin oil a little bit of an aged balsamic these delicious breadcrumbs and our basil.

Watch this off they come, you drizzle a little bit of that olive oil on top, a little bit of that balsamic gives you that sweetness and the deliciousness some of those crunchy breadcrumbs again builds that nice layer of texture.
