**Grilling in Cold Weather: Tips and Tricks**

As Frank the bird dog here can find anything in the world you just pointed out to him, he'll eventually bring it to you like I needed to be on that fence. So, if you're looking for a good grill, most of them grills you got, they got a lid but hey, I can remember when I had a grill didn't have a lid and I was trying to save me some of that heat. I'd get a dishpan or bathtub to cover it up, something like that. If I'm cooking a piece of meat and cold weather, I'll preheat the skillet a little by turning it upside down, that way I can get some of that radiant heat as it goes back and forth.

If you ain't got a lid, you might have to fabricate one, but remember when you get through with it, mad, got so hot you may have to re-season that deal a little. Hey, folks, you know was talking about grilling in cold weather, but let me tell you something; we cook all year round on them Dutch ovens, so it ain't just for grilling in cold weather. So, folks, we're going to talk about cooking something in a Dutch oven in the cold.

First things first, I'm gonna get this ground ready to go by scraping off some of this stuff, getting it out of the way, anything you got, try to keep it about half-level because that's going to make a difference when we put that tray back out there and start cooking. My folks got us a shovel full of good hardwood coals, we're gonna put them out here and then we're gonna get another one and spread this out on this old ground. We've got to let that warm up so you don't make sure you spread them out enough here that we're drying out the ground; we're actually cooking it.

Letting that ground warm and even heat a little because if you start and you just put your trivet out there and you go get coals, and you put 'em around here on this old cold wet ground, you ain't cooking nothing. They're going to be going up pretty quick, that cold wet ground is zapping all that heat of them coals, from the cold. So, we've got to pre-warm the cast iron; it's cold too. I promise you, you never shot cast iron y'all have heard me talk about it.

We're going to set it up there beside old Bertha not directly on top of her or on top of it because I don't want to get it too quick. We'll rotate it around and around that way we get it body temperature and then we can go to cooking in our folks just as we pre-warmed that cast iron you want to be careful too after you get through cooking something in it; you don't want to take it out there and set it in a snowbank or set it somewhere where it's too cool. Let it gradually cool off, don't be thinking well, I'll set this outside to get it out of the way working cool; you'll end up with two halves of cast iron, I promise you.

You see me rake all of those coals on the way that old ground is heated we want to move them before we actually start cooking that way we don't get 'em mixed up with what we're taking out of there to put over here. Because some of them done lost some heat; we want to start with fresh. I got about the same amount of coals out, half of it for Fourth of July now when you're cooking and it's really cold weather, a lot of mistakes people make is they think oh it's so cold I'm gonna have to have a pile of coals this deep no you may have to add to your coals as you cook along but remember that five-second rule it applies in the winter just like it applies in the summer.

So if you can hold your hand over here more than five seconds, it ain't hot enough and I guarantee you this is hot we preheated the ground we pre-warmed our oven so you may have to add a few coals as you go along but don't start out with no heap help and you'll end up with some burnt biscuits. Cold weather it don't matter cold or hot we're going to grill, we're going to cook in a Dutch oven either one; don't go in your bathing suit if it's below ten degrees I promise you.

going to have as much trouble as we are with with a live fire but go ahead and heat that thing up just like you would if you was preheating it with a gas grill but when we're cooking with live hot fire we're going to have to have a few more coals to get the job done this kind of weather om grills got some of them ventilation deals now in the summertime sure I'm going to open them up I'm gonna get me some fire going and some smoke really now I'm going to leave this and open just a little till I get them coals good and hotter if I build a fire in there but then I'm gonna choke it down to nearly nothing and I'm gonna shut this and because that cold air circulating think there's say you've got a 15 mile an hour breeze and it's nine degrees I don't know what the windchill is but it sure
